Shun, an exclusive omakase dining experience by Tavolo Group, offers a unique opportunity to indulge in the freshest fish from Tokyo, flown in weekly to create a menu that constantly evolves with the market. Omakase, meaning “I leave it up to you” in Japanese, is a culinary experience where guests place their trust in the chef, allowing them to craft a personalized tasting menu based on the freshest, seasonal ingredients available.

With only nine seats available at any given time, guests are invited to experience an intimate, curated journey where each dish is a carefully crafted moment that tells a story.

For this space, we focused on designing a setting that reflects the delicate and dynamic nature of the cuisine, where the food takes center stage. We carefully selected fine materials, ensuring the design complements the artistry of the chef while enhancing the sensory experience for the guests. Raw, local stone was brought in to add texture and depth to the venue, creating a tactile environment that mirrors the authenticity and freshness of the dishes.

The venue’s ambiance is intentionally moody and sensual, with lighting being a crucial element. Collaborating closely with Prima Design lighting, we achieved a refined atmosphere that allows the food and the overall dining experience to shine. Each detail, from materials to lighting, has been thoughtfully executed to create a harmonious environment that enhances the storytelling aspect of Shun’s omakase concept.
